After a long week, I went the easy route for dinner with a main dish salad. Cooking Light’s April 2009 issue had some great recipes for Spring, including the Chicken-Feta Tabbouleh we had tonight. I increased the dressing by 50%, for a moister tabbouleh.
I highly recommend taking the time to visit your local Middle Eastern grocery to find #1 fine bulgur/burgul. Much better consistency than the Heartland brand bulgur found at my local Publix.
Serve with some fresh fruit be some pita toasts if you like. Big hit, all around.
