Passover recipe: Never Fail Passover Bagel (modified)

1/2 cup water
1/2 cup passover oil
1 t salt
1 1/2 cups matzo meal
5 eggs

Bring water, oil, salt to a boil. Add matzo meal all at once, stir to combine. Remove from heat, let cool slightly. Beat in eggs one at a time, blending well after each addition.

Allow mixture to rest for 30-45 minutes – this is critical and cannot be skipped.

Preheat oven to 350. Line cookie sheets with parchment paper*.

Moisten hand with water or oil. Form balls about the size of large lemons. Bake about 45 minutes or until golden brown and tops appear crusty. DO NOT OPEN OVEN DURING BAKING TO CHECK PROGRESS – use your oven’s window.

When finished remove from pan and cool on a rack. they will deflate a bit, but will be tender inside and can be split to make sandwiches, French toast etc.

*if you don’t have parchment paper, you can oil the pan really really well. Remove the rolls from the pan quickly so oil isn’t absorbed too much.

Setting the stage for a 25 hour fast isn’t easy. Protein and complex carbs are important. Here’s what’s on deck for tonight:

  • Fresh-cooked gefilte fish
  • Homemade challah
  • Roasted chicken with pesto rub
  • Herbed pot roast with mushrooms
  • Squash Casserole (Robyn)
  • Couscous (Robyn)
  • Dessert (LeeAnn)

Dinner Tonight: 2-bean Chili with Hominy and Fire-roasted Tomatoes

If you are vegetarian, substitute your favorite grain-based protein for the turkey, or just add more beans, some chopped zuke, or whatever. This recipe is very adaptable.

2 lbs (+-) ground turkey
1 large onion, chopped
2-3 cloves garlic, minced

Brown the above in a large pot, then add:

2 cans white hominy, drained
2 cans pinto beans in chili sauce (mild or hot)
2 cans garbanzo beans (or kidney, or black)
1 28 oz can crushed tomatoes
2 cans fire-roasted diced tomatoes (you can drain one or both for thicker chili)

2-3 T good chili powder
1-2 tsp ground cumin
1-2 tsp dried oregano

optional – 2 cans whole roasted green chiles, chopped

Bring up to a hard simmer, then reduce heat and simmer 30-45 minutes.
